Calories in falafel: the chickpea is innocent — the fryer isn't
Falafel wears the strongest health halo in street food: chickpeas, parsley, garlic, cumin — plant-based by recipe, ancient by pedigree. Now the audit: USDA FDC 2707408 — 514 kcal per 100 g (8.3 P / 29.0 C / 41.2 F). That is fried-food territory, because falafel is fried food. The entry's own macros put roughly 72% of those calories in fat — and the chickpea brought almost none of it. The fryer did.

The invisible variable in every row is fryer-oil absorption: the same recipe drinks more or less oil depending on temperature, crumb and drain time, so two stalls serve two different numbers from one menu. Baking the same mix runs roughly 40% lighter — a typical value, labeled typical, because your oven and their fryer will disagree.
The sandwich paradox: bread as rescue

Wrap the fried balls in flatbread, tomato, cucumber and pickles and the density halves: bread-and-salad dilution turns a 514 food into a 265 meal. You hold more grams, but each bite carries half the calories — which is why the sandwich, not the plate, is the sane default.
